The Tri-Tip roast (also known as tri-tip steak) is triangular cut of meat from the bottom sirloin muscle. This flavorful cut is marbled throughout, but tends to be lean, making it an economical alternative to some other cuts of meat. Although an obscure cut throughout most of the United States, it’s popular in Californian barbecue.
